I first made this recipe for a friend on the Cato Diet, but it turned out to be so good that I started eating it right out of the oven. They can be made with just a few basic ingredients and without any flour or sugar. This is one of those easy desserts that even people who are not on a special diet can enjoy.

This simple keto peanut butter cookie requires only 3 ingredients. Can be made with peanut butter, a low-carb sweetener, and with or without eggs. They are sweet and salty. Each cookie contains 3 grams of pure carbohydrates. We like these that are made quickly and easily.

These are perfect for a healthy dessert any day of the week. What's special about them is that you can make them a week in advance and they still have a fresh, chewy taste.

Three Ingredient Peanut Butter Cookies

If you want to make 3-ingredient keto cookies, just mix 1 cup peanut butter, 1/2 cup granulated erythritol or sugar, and 1 egg or chia egg. Preheat the oven to 325 degrees F. Shake all the ingredients together to make a batter and shape it into cookies. Bake on a parchment-lined cookie sheet for 5-10 minutes. Allow cooling completely after baking.

How to Make Keto Peanut Butter Cookies Recipe?

First, heat the oven to 350 degrees and mix all the ingredients in a bowl until well combined. Using a scoop or hands, knead the dough into 1-inch balls. Place the dough balls on a cookie sheet with parchment paper and bake.

Step 1.

Mix all the ingredients um-sized bowl and mix until all the ingredients are well combined.

Roll the dough into 1-inch balls with the help of a scoop or hands. Place the dough balls on a parchment paper or a cookie sheet.

Step 4.

Press the ball twice in the opposite direction with the fork. Make a cross pattern on each cookie.

Step 5.

Now, bake these cookies for about 12 to 15 minutes or until golden brown. Let cool for about 5 minutes before removing it from the tray. Store them in an airtight container if you have any leftovers.

TIPS.

·         They are cooked evenly on a silicone baking mat. If you do not have a silicone baking mat, I highly recommend you buy this silicone baking mat set on Amazon.

NOTES.

Try to buy peanut butter that contains 100% peanuts. If you have a food processor in your home, you can make one yourself. Mix a little sea salt in the flour and sprinkle a little on top.

What to Look Out For When You Buying Peanut Butter?

Always check the label when buying it! Often, brands include palm oil and sugar. There are many brands in the UK that contain natural peanut butter.

Store peanut butter cookies in an airtight container at room temperature. They can be stored for up to 2 weeks. Alternatively, you can store them in the refrigerator for up to 1 month. Place the cookies on parchment paper and place them in a zip lock bag. These cookies can be frozen for up to 5-6 months.
