want to find the best oatmeal cookie recipe? How can I tell you how many
batches I have made? I was healthy and dry and what I didn't make was all
disappointing.
Because I knew what I wanted from these vegan porridge
cookies. I wanted them to be chewed with cinnamon and you get the traditional
nutrition like the old-fashioned oats. And finally, I found it. The taste of
these cookies is nothing short of amazing.
INGREDIENT NOTES.
Vegan butter.
Not all vegan butter is made the same way, but there are
some great ones on the market. My new favorite Country Crack comes from
plant-based butter sticks and tubs. I use Mykonos Vegan Butter as well as Vegan
Butter Stick from Earth Balance.
White and dark brown sugar.
I've never made them with coconut sugar but I'm hoping to
try it soon!
All-purpose flour.
Very simple. If needed, you can replace all-purpose flour
with gluten-free flour. I will soon try them with oatmeal instead of all-purpose
and tell you about it.
Old fashioned oats.
Use old-fashioned oats or rolled oats in oatmeal cookies.
Plant-based milk.
I tested them with almond milk and oat milk and they both
had very good results. I am sure that any plant-based milk similar to almond
milk will work perfectly.
How to make vegan oatmeal cookies.
Mise en place.
Preheat the oven to 350˚F, and line the baking sheet with
parchment paper, measuring the ingredients.
Make your flax egg.
In a small bowl, mix ground flakes and water together. After
mixing, set it aside and let the sun absorb the liquid.
Mix the dry ingredients.
In a medium bowl, mix together the baking soda, flour,
cinnamon, and salt. And set the bowl aside.
Mix the wet ingredients.
In a large bowl, combine the butter and sugar and beat with
an electric mixer until light and fast. Add flax egg and vanilla and mix well.
Add them together.
Now add the flour mixture to the wet ingredients and mix
well. While mixing, keep scraping the sides of the bowl with a spatula. Stir in
the oats and raisins until they are evenly distributed in the flour.
Bake the cookies.
Roll the cookies round with a scoop and place them on a
sheet and bake for 10 to 12 minutes, or until they are set, remove from the
oven and allow to cool on the sheet for a while before transferring to the
cooling rack.
Add vanilla cinnamon or chocolate chips!
They are healthy and delicious. However, you can add some
almond juice or a pinch of cinnamon, or some vegan caramel to suit your taste.
You can also add some vegan chocolate chips, chopped nuts, or nuts.
Enjoy them with a cup of tea or coffee with a glass of

tablespoons water

1 cup all-purpose flour

1/3 cup + 2 tablespoons brown
sugar

INSTRUCTIONS.
Step 1.
First, heat your oven to 350˚F and chop the baking sheet
with parchment paper.
Step 2.
Now add flaxseed and water to a small bowl. Set aside so
that the flax seeds absorb the liquid.
Step 3.
Now in another medium bowl, mix the flour, baking soda,
cinnamon, and salt.
Step 4.
In a large bowl, whisk together the butter and sugar with an
electric mixer until medium and light.
Step 5.
Now add the vanilla and flax mixture to the mixer bowl, and
mix until combined.
Step 6.
Now slowly add the dry flour mixture to this bowl, keep
mixing and scrape the sides of the bowl with a spatula as required.
Step 7.
Add oats and raisins and mix until they are evenly
distributed in the flour. Using a cookie scoop, place 2 tablespoons of balls of
flour on a baking sheet. Bake for 10 to 12 minutes, or until the dough rises to
the top.
Step 8.
Remove the cookies from the oven and allow them to cool for
a few minutes on a baking sheet and then transfer them to a cooling rack.
NOTES.
Fragrant coconuts are also called finely chopped coconuts.
Baking time: 10-12 minutes is best for us to make a soft and
chewy cookie, but if you want to make it crunchier you need to extend the
baking time to 15 minutes.
Gluten-free: They work very well as gluten-free. Simply
replace all-purpose flour with a gluten-free all-purpose baking mixture.
Remember that your rolled oats should be certified gluten-free.
Storage: You can store them in a sealed container at room
temperature for up to a week. You can easily store them in the refrigerator for
2-3 months.
Do not overcook them. After about 15 minutes, they appear to
be slightly baked in the middle, but they do not need to be cooked for more
than 15-16 minutes. Once cooled, they set!
Can you use quick oats for oatmeal cookies?
